Host Pete Evans travels 120 miles outside New York City to the tip of Long Island, where he meets up with chefs Bill Taibe and Will Horowitz. Together, the trio starts the day fishing for whelk, then ventures to a local duck farm for one course of the evening’s meal. Once back at Will’s house, where the feast takes place, the group also does a bit of clamming. You can’t go wrong with a traditional clambake followed by Whelk and Yukon Gold Potatoes with Celery Salsa Verde; Roasted Carrot and Beets with Fermented Black Beans; Smoked Duck with Grits, Pressed Duck Gravy, Black Garlic & Pickled Un-ripened Strawberries; and Grilled Black Bass. As befits a celebration of local seafood, this Moveable Feast brings the party to the source—the shores of the North Fork complete with ocean waves for a soundtrack.
