1 kg of ripe Sloes 250g White Sugar 1 litre of 40%abv Spirit Leave to macerate for at least 1 month, strain and bottle. Then leave to mature for 1 or 2, or even 3 years! (if possible)
Does More Mean Better?
Quantities I used in this video to make a 1/2 litre batch of an Elderflower Infusion, 1/2 litre of Elderflowers 300ml of Water & 100g Sugar, to make the syrup (add this to the flowers when hot, but only add the alcohol once everything has cooled to room temperature) 200ml of 93% abv Neutral Spirit Leave to infuse for 6 days, strain and bottle.
1 litre 40% abv Neutral Spirit (Vodka, etc.) 30 Mint Tips (4” or 100mm long) 150g Sugar Leave to infuse for 5 days, stain and then bottle :)
For this 1/2 litre test batch I used, 150 Clover Heads (tbh, you probably need more) 300ml Water + 50g Sugar + 1/2 tsp Citric Acid = Syrup 200ml 94% abv Neutral Spirit

PARSNIP WINE 2kg Parsnips 1kg - 1.3kg Sugar 1 tsp Citric Acid 350g - 450g Raisins 1/2 tsp Tannin (or some strong Tea) 1 tsp Pectin Enzyme 1 tsp Yeast Nutrient 1 tsp Wine Yeast 1 Campden Tablet Wine Finings PARSNIP SOUP (serves 4) Put 600g Tender Parsnips in 1ltr Vegetable Stock and Blend to a smooth consistency Put in Pan and add 200ml Double Cream Season with Salt and Pepper (also add a few Chilli Flakes if you so wish) Bring to a Simmer, then Serve!
