For this special occasion, an old traditional recipe was created and made with motherly love. This was also in honor of my wife’s special birthday. This dish is normally made during St. Patrick’s Day. The corn beef is cooked inside a pressure cooker with a few added ingredients of pickling seasoning, garlic powder, onion powder, adobo seasoning, black pepper and pickling spices. We add in small baby red potatoes and one head of cabbage that is cut up into for pieces. We then base it with some beef broth and close the lid and cook it for about three hours and a half. At the same time we prepare and make white rice that will accompany the corn beef and cabbage when done. We only add oil and some garlic powder to the white rice to cook it up in the rice cooker. Once everything is fully cooked we take out the corn beef and sliced it to serve.
