In this Dominican recipe, we take beef tripe and make it into a soup called "Mondongo". We take the tripe and cook it for an hour and a half in water with salt, black pepper and lime juice. This is to clean and infuse certain flavors into the tripe. Once it fully cooked, we take out the tripe and cut them up into squares. We place them into a pot that has water, green bell peppers, minced garlic, potatoes, scallion onions, tomato sauce, white onions and carrots. For the seasoning part we add in, sazón seasoning, cilantro, garlic powder, onion powder, adobo seasoning and canola oil. We let this all cook up for about an hour and until the potatoes have soften. Once fully cook take out into a bowl and serve it alongside whit some white rice, or your favorite rice and enjoy.
