Ken Hom visits the Scottish Borders to prepare aromatic five-spice trout and broccoli in fragrant wine sauce for shepherdess Viv Billingham. He also cooks rich aubergine with tomato and basil and spicy orange lamb for actor Tom Conti. Back home in California braised garlic chicken and quick prawn fried rice are on the menu.
